Pink Grapefruit and Leek, a Summer Side Salad

Summer fresh citrus softens the sweet-sharpness of leek in this perfect accompaniment for seafood - fresh off the grill, if possible.

Serves: For 2
  • 2 pink grapefruit
  • 1 large leek
  • Extra virgin olive oil
  1. Cut the top and bottom the grapefruit so that it stands steadily on your cutting board.
  2. Slice downwards, following the curve of the fruit, removing all the white pith.
  3. Slice in towards the centre, just alongside the segment membraness, so that the grapefruit flesh falls free.
  4. As you are doing this, save as much juice as possible, pouring it into a bowl.
  5. Add the grapefruit segments to the bowl.
  6. Remove the tough leaves from the leek, leaving the white and the softest green.
  7. Slice thinly, and add to the grapefruit.
  8. Add a good glug of the Extra Virgin. I start at the middle and spiral outwards in a fine stream.
  9. Mix all together and allow to marinate for at least half an hour.
