All Purpose Festive Spice Mix, plus Bonus Comfort Chai

Warm enough to comfort through the cold months, exotic enough to evoke the treasures of Three Kings, this All-Purpose Festive Spice Mix can be used for all sorts of things, from biscuits through to soups. The bonus Comfort Chai, made after sifting the ground spices, can be brewed on it's own, or with any choice of black or herbal tea.

  • 1 tablespoon cardomom pods
  • 1 tablespoon star anise
  • 1 tablespoon cloves
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 tablespoon allspice
  • 1 cinnamon stick, 15 cm long
  • 3 tablespoons of fennel seeds
  1. For the All Purpose Festive Spice Mix:
  2. Place the cardomom, star anise and cloves into a coffee and spice grinder and pulse until they are reduced to fine powder.
  3. Sift through a fine sieve. Keep the fragments.
  4. To the powder, add the ground ginger, cinnamon and allspice. Mix well and store in a jar.
  5. Add to your cooking and baking as you choose.
  6. For the Comfort Chai
  7. Break up the cinnamon stick. Put into the spice grinder and pulse to small coarse pieces.
  8. Add to the left over fragments from the sifted Spice Mix, along with the fennel seeds. Mix well and store in a jar.
  9. Brew on its own, or add to black or herbal tea as you choose.
