Ingredients
  • 1 banana
  • 2 eggs, separated
  • 1 tablespoon coconut butter or oil, melted
  • 2 generous tablespoons of coconut flour
  • ¼ cup coconut milk
  • 1 teaspoon cinnamon
  • strawberries, honey and coconut cream to serve
Instructions
  1. Prepare your strawberries, coconut cream and other condiments so that you're not rushing at the end.
  2. Melt the coconut butter over a low heat.
  3. Mash the banana with a fork, and mix in the egg yolks until well amalgamated.
  4. Stir in the coconut butter, the coconut flour, the coconut milk and the cinnamon.
  5. Whisk the egg whites until they are white and fluffy, and gently fold this into the pancake mixture.
  6. Heat a frypan, and when hot, place a tablespoon or two of the mixture into the pan. Wait for the bubbles to form, and then very gently turn over to cook on the other side.
  7. Place in foil to keep hot while you cook the rest of the mix.
