Energy Balls with Almonds, Dates and Collagen

  • 3 scoops (1/3 cup) Chocolate Coconut Collagen Fuel
  • 1 cup pitted dates ( I use Deglet Nour)
  • 100 grams ground almonds
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup sesame seeds
  • ⅓ cup coconut oil, melted
  • ¼ cup of finely shredded coconut for rolling
  1. Place the Collagen Fuel, the dates and the ground almonds into the food processor.
  2. Grind the pumpkin, sunflower and sesame seeds in a spice grinder until they resemble a course flour. Add to the food processor.
  3. Process on high speed. When well mixed, and with the processor running, pour the coconut oil through the hatch. Keep processing on high until the mixture starts holding together. This might take a couple of minutes.You might want to stop it a couple of times to scrape down the sides.The mixture will have the right consistency when it starts forming a wall around the sides of the processor. Stop the processor and remove the blade.
  4. Form 18 balls by pressing the mixture tight in your hands. Roll them in the shredded coconut, and refrigerate for a few hours until the oils harden. Store in the fridge
