Salsa Verde, the Summer Condiment - Paleo, AIP, Whole 30, Low Fodmap

Salsa Verde is the condiment of Summer. So typically Italian - just put three or four perfectly matched ingredients together - anchiovies, capers and flat leaf parsely - mince them almost to a paste, and drown the lot in extra virgin olive oil. Then just spread it around.

Serves: 1 jar
  • 3 tablespoons salted capers
  • 6 anchiovies in olive oil
  • 1 small bunch fresh chives
  • 1 large bunch fresh flat leafed parsley
  • 1 tablespoon lemon juice
  • extra virgin olive oil
  1. Soak the capers in water for at least 5 minutes, then rinse them.
  2. Heap the capers, anchiovies, chives and parsley onto a large cutting board and, using a mezzaluna, chop until very fine.
  3. Transfer to a jar, stir through the lemon juice, and pour in enough extra virgin olive oil to cover.
